Quinoa Upma

A healthy and delicious South Indian breakfast made with quinoa and vegetables.

Method:

  1. Rinse quinoa thoroughly under running water and drain well.
  2. Heat oil in a pan and add mustard seeds. Let them splutter.
  3. Add urad dal and chana dal. Sauté until golden brown.
  4. Add chopped onions, green chilies, ginger, and curry leaves. Sauté until onions are translucent.
  5. Add chopped vegetables (carrots, peas, beans) and sauté for a few minutes.
  6. Add rinsed quinoa, turmeric powder, and salt. Mix well.
  7. Add water and bring to a boil. Reduce heat and cover. Cook until quinoa is tender and water is absorbed.
  8. Garnish with chopped coriander leaves and serve hot with coconut chutney or sambar.
